Instructions
- Lightly toast the pine nuts in a dry pan over medium heat until lightly golden. Set aside to cool.
- Place the pine nuts, basil and lemon juice in the bowl of a food processor and pulse until chopped.
- Add the oil and the parmesan and pulse the pesto three or four times.
- Check the acidity – you may need to add more lemon juice. If it is too acidic, add more olive oil.
- Pour into a bowl and season well with salt and pepper.
