Instructions
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
- Cut each zucchini in half lengthwise 4 times (to make 8 long sticks from each zucchini). Then cut the sticks once across in the middle, making 16 sticks from each squash (approximately 4 inches long). Pat dry with paper towels.
- Prepare one shallow bowl with beaten egg. On a jelly roll pan or a large plate, combine the grated Parmesan cheese, garlic powder, and black pepper. Dip each zucchini stick in the egg, shake off the excess, then place into the Parmesan mixture. Gently shake until all sides are coated.
- Place on the prepared baking sheet in a single layer without touching. Bake for 20 minutes, rotating the pan halfway through, until fairly dark golden. Place under the broiler for 2-3 minutes, until darker golden and crispy.
- AIR FRYER OPTION: If you’d prefer to make these in an air fryer instead of the oven, you can place zucchini fries in a single layer of your air fryer basket and cook at 400 degrees F for 10 minutes.
