Instructions

  1. Preheat oven to 350°F.
  2. In a medium-sized bowl, combine the egg whites and cream of tartar. Beat until soft peaks form. Set aside.
  3. In a separate large bowl, add the egg yolks, half the butter, half the vanilla extract, cream cheese and 2 tablespoons of the erythritol. Mix well to combine.
  4. To the egg yolk mixture, add the baking powder, almond flour and 1 teaspoon of the cinnamon.
  5. Gently fold in the egg white mixture into the egg yolk mixture.
  6. Spray a bundt pan with non-stick spray. Pour half the batter into the pan.
  7. In another bowl, combine the remaining cinnamon, butter and half of the remaining erythritol. Mix together with hands.
  8. Crumble this new cinnamon mixture onto the first layer of batter and add the baby.
  9. Pour the rest of the batter on top, ensuring the baby is covered.
  10. Bake 30-40 minutes until cooked through.
  11. While cake is baking, whip heavy cream until medium peaks form. Add in remaining vanilla extract and mix to combine. Set aside.
  12. In a separate bowl, combine the remaining erythritol and food coloring to your liking. Set aside.
  13. When cake is done, remove from oven and allow to cool completely.
  14. Top with whipped cream and colored erythritol. Enjoy!
