Instructions

  1. In a small bowl or mason jar, mix lemon juice, extra virgin olive oil, sumac, salt, and garlic for the salad dressing; set aside.
  2. Cut the chicken breasts into bite-sized pieces and place in a large baggie. Pour half of the dressing over the chicken and refrigerate for 2-3 hours (or even overnight) to marinate it.
  3. To cook chicken: Heat a large pan over medium heat. Add the chicken and cook for about 5-10 minutes until the chicken is cooked through (i.e. reaches an internal temp of 165F) and turns golden brown on the outside.
  4. In a large bowl, add romaine lettuce, tomatoes, green onions, cucumbers, parsley, and mint together, along with the cooked chicken. Then toss with remaining dressing. Serve immediately.
