  3. Combine all ingredients except the pork, with 1 teaspoon each of kosher salt and black pepper, in a small dish.

  5. Bake 15 minutes.
  6. Reduce heat to 350°F and continue to roast until internal temperature of pork reaches 145°F, about 30 minutes.
  7. Remove pork from oven and let rest for 10 minutes.
  8. Remove twine and slice roast thinly against grain.
  9. Serve with lime wedges, if desired.
