Cajun Tofu with Swiss Chard brings a spicy twist to your weeknight dinner. This recipe uses extra firm tofu and vibrant Swiss chard to create a satisfying low-carb meal. In just 30 minutes, you can prepare a dish that fits well into a low-carb lifestyle, with only 19 grams of carbs per serving. Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Drain tofu and pat dry. Cut into 1-inch cubes.
  3. Transfer to a bowl and toss with all of the spices and 2 tablespoons of the olive oil.
  4. Place in a single layer on the baking sheet. Bake for 20-30 minutes.
  5. Meanwhile, in a skillet over medium-high heat, add the remaining olive oil, shallot and garlic. Cook for 3-4 minutes. Then, add the Swiss chard and cook until it is wilted, about 2-3 more minutes.
  6. Add the coconut milk and nutritional yeast. Let simmer 3-5 minutes.
  7. Remove the tofu from oven when done. To serve, divide both the chard and tofu in half and enjoy!
