Instructions

  1. Preheat oven to 400°F.
  2. Coat a jelly-roll pan with nonstick spray and line with a large sheet of wax paper.
  3. Place spinach in a colander and rinse under hot running water for 30 seconds. Squeeze any excess water from the spinach.
  4. Place spinach in a medium bowl. Add egg yolks and mix well.
  5. Place egg whites in a separate large bowl. Beat with electric mixer until stiff peaks form.
  6. Fold the egg whites into the spinach mixture.
  7. Spread evenly in the prepared jelly-roll pan and cover with foil. Bake for 20 minutes, or until firm.
  8. In a small bowl, combine the mozzarella, Parmesan, and yogurt. Mix well.
  9. Turn the omelet onto a clean sheet of wax paper, then peel off the lining.
  10. Spread evenly with the cheese mixture and roll up the omelet.
  11. Cut into 12 slices and serve.
