Instructions

  1. Heat the lard/butter/oil in a large pot over medium to high heat.
  2. Add in sliced red onion and saute them in the cooking fat until softened.
  3. Add the pork belly and cook until brown on both sides.
  4. Add the tamarind soup mixture and water to the pot, and cook for about 5 minutes.
  5. Add diced tomato. Note: the purpose for the tomato is to give out a subtle hint of color to the soup.
  6. Let the meat reduce with the broth until desired tenderness is achieved. This can take up to 45 minutes.
  7. Then add your eggplant and string beans to soup and cook for about 5 minutes or until tender. Then turn off the heat, add spinach, and cover. Allow spinach to wilt before serving.
