Instructions

  1. Combine the heavy cream and Swerve confectioner's sugar in sauce pan over medium high heat.
  2. Bring to a boil and reduce heat to a simmer.
  3. Once simmering add the cocoa powder and combine well. Using a whisk, try to get as many chunks out as possible.
  4. In a separate bowl combine the 2 egg yolks and vanilla extract. Set aside.
  5. Continue to stir cream, sugar and cocoa mixture as it starts to thicken. Once thick remove from heat. Allow to cool for 5 minutes.
  6. Once cooled, slowly add the cream mixture to the yolks with a hand mixer. Mix to thoroughly combine, until you get a slight froth on the top.
  7. Place in the freezer for 4 hours checking and stirring every hour.
  8. Let sit out to soften before scooping.
