Roasted Lemon Garlic Chicken is a fantastic choice for a weeknight dinner, combining the brightness of lemon with aromatic garlic. This recipe showcases the simple yet impactful flavors of fresh rosemary and butter, making it a standout on your dinner table. Instructions

  1. In a large pot combine the water and salt.
  2. Rinse and pat dry the chicken.
  3. Place the chicken in the pot of water and salt and refrigerate for a minimum of 4 hours.
  4. Rinse the chicken and pat dry with a paper towel.
  5. Preheat the oven to 400 degrees.
  6. In a small bowl, mix the butter, garlic and lemon juice.
  7. Rub the butter mixture under the skin and outside of the chicken leaving about 2 tbsp behind for basting. Sprinkle some extra salt on the skin and top with rosemary.
  8. Cover the chicken with foil and bake for 20 minutes.
  9. Remove the chicken, and baste with the leftover butter mixture.
  10. Cover the breast with the foi again and, place the chicken back in the oven for about 45 minutes, until the thickest part of the chicken reaches 165 degrees.
  11. Remove the chicken from the oven, allowing it to rest for 10 minutes, covered before carving.
