Instructions

  1. Finely dice green onions (separating the green and white parts), and cut the Spam into cubes about ¼ inch x ¼ inch. Set aside.
  2. In a frying pan, add 1 tbsp of oil on high heat. Once oil is up to high temp, add diced Spam and cook for 2-3 minutes until you get a nice brown crust on the Spam. Transfer to a bowl and set aside.
  3. In the same frying pan, add 1 tbsp of oil on high heat. Once oil starts to lightly smoke, add cauliflower rice and the white parts of the green onion, stirring often. Cook for 2-3 minutes or until desired texture is reached.
  4. Then add the Spam back to the pan, and season with salt and black pepper. Mix well and continue to cook for an additional 1 minute.
  5. Finally, mix in the green parts of the green onion, transfer to a bowl and enjoy hot!
