With just 6 grams of carbs per serving, these tartlets feature a flaky base made from almond flour and whey protein, topped with crispy bacon and creamy brie. Instructions

  1. Preheat oven to 325 degrees. Lightly grease or insert liners in two mini tart or muffin pans.
  2. Cook chopped bacon in a medium saucepan over medium heat until crisp. Remove and let drain on a paper towel lined plate.
  3. Whisk almond flour, whey protein, baking powder, garlic powder, salt and xanthan gum together in a large bowl.
  4. Stir in eggs and butter until dough comes together. It will be sticky!
  5. Turn out dough onto a large piece of parchment, and then pat into a rough rectangle.
  6. Top with another piece of parchment and roll out to ¼ inch thickness. Peel off top piece of parchment paper.
  7. Using a 2 inch round cookie cutter, cut circles out of dough and press into cavities of prepared tart pans or muffin tins. Re-roll dough scraps as necessary until all dough in used.

  9. Bake 15 minutes, or until brie is bubbly and melted.
  10. Remove and let cool 10 minutes in pan, then gently lift out with a sharp knife. Serve immediately.
