Low-Carb Cheddar & Chive Chips are a fantastic snack that aligns with low-carb and keto-friendly eating. Made with pork rinds, sharp cheddar cheese, and fresh chives, these chips are ideal for meal prep or a quick side dish. With just 1 gram of carbs per serving, they offer a savory crunch without the carbs, making them a thoughtful choice for anyone looking to support their metabolic health.

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add pork rinds to your food processor and grind until fine. Pour into a bowl.
  3. Add shredded cheddar cheese to bowl of pork rinds. Mix well.
  4. Add chives and mix thoroughly.
  5. Using a small muffin pan, put a small amount of your mixture in the bottom of each tin. It should be crumbly, but may be sticky and greasy depending on your pork rinds. Sprinkle enough crumbles into each muffin tin to cover the bottom.
  6. Bake for 10 minutes, or until the edges are crispy. Remove from heat and let cool for a couple of minutes.
  7. Ready to serve! They’re tasty on their own or with cream cheese or other low-carb spread on top.
