Instructions

  1. Heat the water to boiling.
  2. Remove the water from heat, and then sprinkle the gelatin powder in while stirring vigorously, until the powder is dissolved and the solution is clear.
  3. Put the cream cheese, olive oil, xylitol, and vanilla extract into a food processor. Pour in the hot gelatin solution, and then process until smooth.
  4. Rinse the berries, pat them dry, and then put them into the bottom of a 9-inch pie dish.
  5. Pour the warm gelatin-cream cheese mixture over the berries.
  6. Chill in the refrigerator until the cheesecake sets, about 30-60 minutes.
