With just a few ingredients like tender beef brisket, green onions, and garlic, this low-carb meal makes it easy to stay on track with your keto-friendly eating. Each serving contains only 1 gram of carbs, making it ideal for those focused on low-carb living. This dish is perfect for meal prep, as the slow cooker does all the work for you while you enjoy the aromas filling your kitchen.

Instructions

  1. Add oil to the bottom of your slow cooker, along with green onion (white part only) and garlic cloves. Set the brisket on top, fat side up. Pour broth over the top, sprinkle with salt and pepper, and add sprigs of fresh thyme. Cover and cook 6 to 8 hours on low, or until brisket is completely tender.
  2. Remove from slow cooker to slice and enjoy with your favorite Virta-friendly sides!
  3. Optional: If you have a little extra time and want more of a crust on your brisket, you can sear it before putting it into the slow cooker. Just pat the brisket dry with a paper towel, rub it generously with salt and pepper, and sear the sides in a large skillet on medium-high heat until a golden-brown crust forms. Then transfer to the slow cooker per step
