Instructions

  1. Preheat oven to 400°F.
  2. Coat a nonstick jelly-roll pan with olive oil.
  3. Place the tomatillos in the pan.
  4. Roast, turning every 5 minutes, until the tomatillos are browned and almost cooked thoroughly.
  5. Place the tomatillos in a food processor blender.
  6. Add peppers, onions, and cilantro.
  7. Process until coarsely pureed.
  8. Pour the puree into a small bowl.
  9. Stir in the water, 1 tablespoon at a time, until the sauce reaches desired consistency.
  10. Stir in salt.
  11. Let stand for 30 minutes before serving.
