Preheat the oven to In a large bowl, break up the mushrooms into roughly even pieces by hand – I typically break the caps of smaller mushrooms into 2 and bigger ones into 3, and for the longer stems, I’ll break them apart ‘hamburger-style’. Add the olive oil and a generous amount of salt and pepper to the bowl. Mix the mushrooms around until it looks like every bit has taken on some of the oil. Spread them out on a baking sheet, and cook for 20 minutes.
  2. In the meantime, chop up the tarragon and garlic and put it into the large bowl. Once the mushrooms are done, dump them back in the bowl and thoroughly mix before serving. Add more salt to taste.
