Instructions

  1. Preheat the oven to 400°F.
  2. Cut a thin slice from the top of the garlic to expose the cloves.
  3. Place the garlic cut side up on a large piece of foil.
  4. Seal the top and sides of the foil tightly.
  5. Place in the oven and roast for 45-60 minutes, or until the cloves are very soft and lightly browned.
  6. Remove from the oven and open the packet. Set aside until cool enough to handle.
  7. Squeeze the cloves into a medium bowl.
  8. With the back of a large metal spoon, mash the garlic to a smooth paste.
  9. Gradually whisk in the broth and vinegar.
  10. Whisk in the parsley, rosemary (if desired), salt, and pepper.
  11. Then whisk in the oil in a slow, steady stream.
  12. Transfer to small jar and refrigerate until ready to serve.
