Instructions

  1. Cut out the cabbage core and finely chop it, cutting the leaves into fine shreds.
  2. Heat the oil in a large stock pot, over medium heat. Add onions and season with salt and pepper. Saute stirring frequently until the onion starts to soften and turns translucent, about 10 minutes. Add the garlic and saute for another 5 minutes.
  3. Add shredded cabbage, rosemary and thyme. Cover the pot and let steam for a bit to soften the leaves. Then stir the cabbage to help it wilt and soften. Cook covered for about 30 minutes on low heat.
  4. In another saucepan saute the ground beef, breaking up the meat until it is cooked, about 5 to 8 minutes.
  5. Add the beef to the cabbage pot and then add the broth. Simmer for at least 30 minutes to allow the flavors to marry.
  6. Serve in shallow bowls, topped with a slice of provolone cheese, a swirl of olive oil, and salt and pepper to taste.
