Instructions

  1. Place the eggs in a medium saucepan and cover with cold water.
  2. Bring to a boil over high heat.
  3. Remove from the heat, cover, and let stand 12 minutes.
  4. Run the eggs under cold water until chilled.
  5. Peel, halve and transfer to a large bowl.
  6. Add the tofu, mustard, salt, and hot sauce to the eggs
  7. Fold in the onion and parsley.
  8. Cover and chill until serving time.
