Instructions

  1. Add heavy cream to a stand mixer or large bowl. Whip on high until stiff peaks form. Set aside.
  2. In a separate large bowl, add cream cheese, vanilla, sweetener, and protein powder. Whip until light and fluffy. Fold in whipped cream.
  3. Using a decorating bag (or Ziploc bag with corner cut off), pipe cream cheese mixture in cupcake liners or on a baking sheet lined with parchment paper to form ghosts (makes about 16). Add chocolate chips for eyes.
  4. Place in the freezer for 1-2 hours or until firm until ready to serve.
