Instructions

  1. Preheat air fryer to 380 degrees F. Prepare the air fryer basket using a non-stick cooking spray.
  2. Arrange three bowls: Add the coconut flour and seasonings (black pepper, smoked paprika, and garlic salt) to one bowl. Beaten eggs in the second bowl. Coconut flakes in the third bowl.
  3. Dip the shrimp into the coconut flour mixture, then dip into the egg mixture, and finally into the coconut flakes. Set aside on a wire rack until you've finished with all of the shrimp.
  4. Add the coconut shrimp in a single layer into the prepared air fryer basket and cook for 8-10 minutes at 380 degrees F, flipping the shrimp halfway through. You may need to cook them in batches depending on size of your air fryer basket.
  5. Remove when golden brown and serve immediately.
